Ham Egg & Cheese Crescent Sandwiches - Start your day with a flavor explosion! These sandwiches are the ultimate breakfast treat. Featuring soft and buttery crescent dough filled with scrambled eggs, slices deli ham, cheddar cheese, and fresh chives, they're baked to perfection and sprinkled with everything bagel seasoning. Preheat oven to 350ºF. Spray a 9x13-inch baking sheet with nonstick cooking spray.
In a large bowl, whisk together eggs and milk. Season with salt and black pepper to taste. Melt butter in a large nonstick skillet over medium heat. Add egg mixture to the pan and cook over low heat until the eggs just set. Remove from heat.
Unroll one can of crescent rolls and roll into a rectangle on the prepared baking sheet. Add a layer of cheese slices, top with slices of deli ham, then top with scrambled eggs, chives, and more cheese.
Unroll a second can of crescent dough and place on top of the cheese. Pinch together edges to seal. Brush olive oil over the top of the dough and sprinkle everything bagel seasoning over the top.
Bake for 18 to 22 minutes, until crescent dough is golden and cooked through. Let cool for at least 5 minutes before slicing into squares.

You will need 3 cups of Egg Beaters to equal 12 eggs.
Can I make Crescent Egg Sandwiches ahead of time? Yes. Assemble the sandwiches. Cover the baking pan with plastic wrap and store in the refrigerator until ready to bake.
Can I Freeze Crescent Sandwiches? Yes! Bake the sandwiches and cool to room temperature. Cut into squares and place in a freezer bag with parchment paper between layers. Store in the freeze for up to 4 months.
Thaw and reheat in the microwave or covered in aluminum foil in the oven.
Store leftovers in an airtight container in the fridge.
