Place half a jar of marinara sauce, garlic, cottage cheese, Italian seasoning, salt, and pepper in a high speed blender. Blend until smooth.
In a large skillet, cook Italian sausage over medium-high heat until no longer pink. Drain excess grease. Add the cottage cheese mixture and remaining pasta sauce to the skillet and simmer over low heat.
In a large pot, bring water to a boil over high heat. Add pasta and cook according to the package directions for al dente. Drain in a colander.
Add the cooked pasta to the pan. Toss to coat with the sauce. Garnish with fresh basil and parmesan cheese.
Notes:
If you don't have a blender, you can make the sauce in a food processor.
Can substitute ground turkey, ground beef, ground pork, or turkey sausage.
You can omit the meat if you prefer.
Shrimp or tofu are also delicious with this sauce.
I recommend using full-fat cottage cheese for a creamier texture, but you can use low-fat cottage cheese for a lower-calorie dish.
