In a large bowl, whisk together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, oregano, basil, thyme, and cayenne pepper.
Cut chicken tenderloins into bite-sized pieces. Place chicken in the bowl, tossing to coat.
Heat olive oil in a large skillet over medium-high heat.
Add chicken to the pan in a single layer and cook for 2 to 3 minutes on one side to get a nice sear. Flip the chicken and continue cooking until the chicken is cooked through and reaches an internal temperature of 165ºF, approximately 3 to 4 minutes.

Boneless skinless chicken breasts, chicken thighs or chicken tenderloins all work great.
