In the bowl of an electric stand mixer fitted with the dough hook, combine active dry yeast, warm water, and honey. Let the yeast proof for 5 minutes.
Add softened butter, salt, warm water, whole wheat flour, and all-purpose white flour to the yeast mixture. Mix on low speed until a soft dough forms. Increase to medium speed and mix for 5 minutes.
Place the dough in a greased bowl. Cover the bowl and let the dough rise until doubled in size.
Spray two 9-inch loaf pans with nonstick cooking spray.
Punch down the dough. Divide the bread dough in half and shape it into loaves. Place dough in the prepared pans and let rise until doubled in size.
Preheat oven to 350ºF.
Bake bread for 30 to 35 minutes, until golden brown.
Remove the bread from the pans immediately. Cool the bread loaves to room temperature on a wire rack.

If you don't have a stand mixer, you can make the dough by hand with a wooden spoon. Knead bread for 5 to 10 minutes before letting it rise.
Can I use instant yeast? Yes. If using instant yeast, you can skip letting the yeast proof.
Can I freeze Honey Whole Wheat Bread? Yes! Cool the bread completely and place the bread loaves in a ziplock bag. Store in the freezer for up to 6 months.
