The BEST Chicken Alfredo Lasagna Recipe - Layers of homemade Alfredo sauce, tender chicken, gooey mozzarella cheese, and creamy cottage cheese, all nestled between lasagna noodles. A comforting family favorite that's perfect for cozy dinners or special occasions. Dive into creamy pasta perfection!
Preheat oven to 375ºF. Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
Bring a large pot of water to a boil over medium-high heat. Cook lasagna noodles according to package instructions for al dente. Reserve at least 1/4 cup of the pasta water. Drain the remaining water and set aside.
To make the homemade alfredo sauce, melt a stick of butter in a large skillet over medium-high heat. Add garlic cloves and cook for 30 seconds. Whisk in heavy cream. Cook, stirring frequently, until the sauce has thickened. Remove the skillet from the heat. Season with salt and black pepper. Add parmesan cheese to the cream mixture and stir until the cheese melts. If the sauce is too thick, add a splash of pasta water to reach the desired consistency.
In a bowl, combine cottage cheese, egg, and parsley. Stir well. Set aside.
To assemble the lasagna, spread half of a cup of alfredo sauce on the bottom of a 9x13-inch baking dish. Layer six lasagna noodles over the sauce. Top the noodles with half of the cottage cheese mixture. Top with half of the shredded chicken and 6 mozzarella cheese slices. Spread half of the Alfredo sauce over the cheese.
Repeat the layers: pasta, cottage cheese, chicken, mozzarella, and sauce. Top the casserole with mozzarella cheese.
Cover the baking dish with aluminum foil. Bake for 25 minutes. Remove the foil and bake for an additonal 25 minutes, until the bubbly and the cheese is melted and golden brown. Garnish with parsley.
Cool for 15 to 20 minutes before cutting into slices.
Notes:
I use rotisserie chicken in this dish. You can use any cooked chopped chicken you have on hand.
This is a great recipe to use up any leftover grilled chicken!
Can I use store-bought Alfredo sauce? Yes. You can substitute two jars of Alfredo sauce.
I really encourage you to make the homemade Alfredo sauce. It is packed full of amazing flavor! It is so much better than the jarred stuff.
