Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray. Set aside.
Remove skin from chicken. Pull the chicken meat from bones and discard bones. Chop chicken meat and spread in bottom of the prepared baking dish.
Prepare stuffing mix according to package directions. Set aside.
Combine sour cream, cream cheese, cream of chicken soup, and broccoli. Spread over chicken.
Top casserole evenly with prepared stuffing.
Bake uncovered for 30 minutes.
Can substitute 4 cups of cooked chopped chicken for the rotisserie chicken.
If you aren't a fan of broccoli, just leave it out. You could even do half the casserole with broccoli and a half without broccoli.
Feel free to use a can of Cream of Mushroom, Cream of Broccoli, or a can of Broccoli Cheese Soup in place of Cream of Chicken.
I love to make this casserole the night before we eat it for dinner. I mix it up before bed and let it hang out in the refrigerator overnight. Take the casserole out of the fridge about 20 or 30 minutes before baking so it can come to room temperature.
You can freeze the casserole unbaked for later. To bake this casserole after freezing, thaw in the refrigerator and bake as directed below. You can also freeze the baked casserole.
To reheat the baked casserole after freezing, thaw completely in the refrigerator and bake covered at 350ºF for about 20 to 30 minutes or pop the casserole in the microwave.
