In a Dutch oven over medium-high heat, cook smoked sausage until lightly browned.
Add black eyed peas, onion flakes, garlic powder, Rotel, cajun seasoning and broth. Bring to a boil and reduce heat.
Simmer for 20 minutes. Serve with cooked rice.
Notes:
I like to use Conecuh Smoked Sausage. You can use any brand that you prefer.
To reduce the calories, use Smoked Turkey Sausage.
Is Black Eyed Pea & Smoked Sausage Soup spicy? There is a small kick to the soup from the Rotel tomatoes. If you are worried about the heat, use a can of MILD Rotel tomatoes.
For store-bought Cajun seasoning, I like Tony Chachere's or Slap Ya Mama. Look for salt-free seasoning if you are sensitive to salt.
Adjust the seasoning up or down to your desired heat level.
We serve the soup over rice. You can use any cooked rice that you enjoy - white, brown, jasmine. You can omit the rice if you prefer.
Can I make Black Eyed Pea & Smoked Sausage Soup in the slow cooker? Yes! Brown the sausage and dump the remaining ingredients into the crockpot and cook until warm.
