Strawberry Chocolate Chip Cookies - loaded with freeze-dried strawberries! So simple to make and they taste amazing! Sugar cookie mix, butter, egg, strawberry extract, pink food coloring, chocolate chips, and freeze-dried strawberries. The cookies are delicious warm out of the oven or crumbled up in some vanilla ice cream - YUM! This recipe is easy to double or triple for a crowd.
Heat oven to 375°F. Line a cookie sheet with parchment paper.
In a large bowl, mix together cookie mix, butter, extract, food coloring, and egg until soft dough forms. Stir in mini chocolate chips and freeze-dried strawberries.
Using a medium cookie scoop, drop dough 2 inches apart on the prepared cookie sheet.
Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.
Notes:
I used Betty Crocker sugar cookie mix.
I bought the freeze-dried strawberries at Walmart.
Can omit the pink food coloring if preferred.
Feel free to swap the chocolate chips for white chocolate chips - YUM!
The cookies will keep about 3 days in an air-tight container.
Can Chocolate Chip Cookies be frozen? Yes! Bake the cookies and cool completely. Place the cookies in a freezer bag and freeze. The cookies will keep up to 3 months in the freezer.
