Three Cheese Chicken Spinach & Artichoke Alfredo Pasta - think cheesy chicken Alfredo pasta meets spinach & artichoke dip. Two of my all-time favorites in one pan. Super easy to make. Can freeze for a quick meal later!! Penne pasta, Alfredo sauce, ricotta cheese, sour cream, garlic, parmesan cheese, frozen spinach, chopped artichokes, eggs, and chopped chicken. Use a rotisserie chicken for quick prep. Makes a ton - great for a crowd!
1(10 to 12-oz)package frozen chopped spinach, thawed and drained
1(14-oz)can artichoke hearts, drained and chopped
2cupsmozzarella cheese
Instructions:
Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
Cook pasta according to package directions; drain and return to pot.
Stir together all ingredients except mozzarella cheese. Spread mixture into prepared baking dish. Sprinkle casserole evenly with mozzarella cheese.
Bake uncovered for 30 minutes or until bubbly.
Notes:
I used a rotisserie chicken for the cooked chicken in this casserole. It tastes great and is a HUGE timesaver!
Make sure to get all of the water out of the frozen spinach. I squeeze the thawed spinach into some paper towels to get out as much liquid as possible.
This pasta casserole would also be delicious with some mushrooms in the mix. YUM!
Can Three Cheese Chicken Spinach & Artichoke Alfredo Pasta be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it before baking.
To bake after refrigerating, take the casserole dish out of the refrigerator 30 minutes before baking and bake as directed below.
