Chocolate Coconut Balls Recipe - sweet coconut and almonds dipped in chocolate. Tastes just like an Almond Joy Candy Bar! Only 6 ingredients - coconut, sweetened condensed milk, powdered sugar, vanilla, whole almonds, and chocolate candy coating. A great dessert for parties, tailgating, and homemade gifts!
In a glass mixing bowl, combine coconut, powdered sugar, sweetened condensed milk, and vanilla extract. The dough will be very sticky.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
Remove candy from the fridge. Using a small cookie scoop, scoop the coconut mixture and roll it into 1-inch balls. Press a whole almond into the center of each ball.
Place coconut balls onto a parchment paper-lined baking sheet and place in the freezer for at least 30 minutes.
In a microwave-safe bowl, melt chocolate coating according to package directions.
Using a fork or chocolate dipper, dip the coconut truffles into the melted chocolate. Tap the fork on the side of the bowl to let the excess chocolate drip off. Place balls on parchment or wax paper to harden.
Notes:
Can omit the almonds if you prefer.
Freezing the coconut balls makes them easy to dip into the chocolate.
I use candy melts. You can substitute chocolate chips and shortening if you prefer.
You will need 2 cups of chocolate chips and 2 tablespoons shortening.
You can use semi-sweet chocolate chips, milk chocolate chips, dark chocolate chips, white chocolate chips, or bittersweet chocolate chips.
Garnish the tops of the candy balls with sprinkles or chopped almonds.
Can I freeze Coconut Chocolate Balls? Yes! Make the candy and let it harden. Store in the freezer for up to 3 months.
Store candy in an airtight container in the refrigerator.
