Cajun Hash Brown Casserole – cheesy hash brown casserole loaded with chicken and smoked sausage. Seriously DELICIOUS! We ate this two days in a row! OMG! Chicken, smoked sausage, cajun seasoning, cheddar cheese, french fried onions, heavy cream, frozen shredded hash browns, cream of chicken soup, and sour cream. This is a family favorite! Makes a great freezer meal!
Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
In a large skillet, cook smoked sausage and oil over medium-high heat for 5 to 8 minutes, until sausage is lightly browned.
In a large bowl, combine cooked chicken, smoked sausage, soup, sour cream, cajun seasoning, 1 1/2 cups cheddar cheese, half of the fried onions, heavy cream, and hash browns. Pour into prepared pan.
Top the casserole with the remaining 1/2 cup of cheddar cheese and french fried onions.
Bake uncovered for 50 to 60 minutes.
Notes:
I updated this recipe and added french fried onions and heavy cream. You can omit both ingredients to make the original version.
For a lower calorie dish, substitute smoked turkey sausage and low-fat sour cream.
There is no need to thaw the frozen hashbrowns before adding them to the bowl.
I recommend using a salt-free or homemade cajun/creole seasoning.
Can substitute cream of mushroom soup or cream of celery soup.
Can Cajun Hash Brown Casserole be made in advance? Yes! Assemble the casserole and cover the pan with plastic wrap. Store in the refrigerator until ready to bake.
Can Cheesy Hashbrown Casserole be frozen? Yes! Assemble the casserole and cool completely. Cover the pan with plastic wrap and aluminum foil. Store in the freezer for up to three months.
When ready to bake, thaw overnight in the refrigerator and bake as directed.
Store leftovers in an airtight container in the refrigerator.
