Keto Garlic Rolls Recipe– Even if you aren’t doing the Keto diet, you will love these dinner rolls! No yeast required! The rolls have a soft and fluffy texture just like any good bread roll. Mozzarella cheese, cream cheese, eggs, almond flour, baking powder, onion powder, garlic powder, salt, melted butter, garlic cloves, and parmesan cheese. Effortless to make and tastes great!
Preheat oven to 400°. Line a baking sheet with parchment paper.
In a microwave-safe bowl, combine mozzarella cheese and softened cream cheese; microwave on high until melted. Stir until smooth.
Add eggs and mix well. Stir in the dry ingredients - almond flour, baking powder, onion powder, garlic powder, salt, and black pepper.
Using a large cookie scoop, scoop dough into balls and place on prepared pan.
In a small bowl, combine melted butter and minced garlic. Brush garlic butter over the tops of the rolls. Sprinkle rolls with grated parmesan cheese.
Bake bread in a preheated oven for 14 to 16 minutes, until golden brown. Brush warm rolls with any leftover garlic butter.
Notes:
I use King Arthur Flour brand almond flour. I also like Bob’s Red Mill Almond Flour.
Look for superfine almond flour or blanched almond flour.
Avoid using almond meal. You won't get the fluffy texture without almond flour.
Make sure to use baking powder and NOT baking soda.
Can I use coconut flour instead of almond flour? No, coconut flour requires more moisture than almond flour.
Can Keto Rolls be frozen? Yes. Bake the rolls and cool to room temperature. Transfer rolls to a freezer bag and store in the freezer for up to 3 months,
Reheat rolls in the microwave.
Store leftover rolls in an airtight container in the refrigerator.
