1(12-oz)jar marinated artichoke hearts,drained and liquid reserved
1/4cupsundried tomatoes,chopped
3green onions,chopped
½largegreen pepper,chopped
⅓cupmayonnaise
1tspcurry powder
4cupschopped cooked chicken
Instructions:
Prepare the rice-a-roni according to package instructions. Cool to room temperature.
Drain marinated artichoke hearts over a large bowl. Add mayonnaise and curry powder and stir to combine.
Chop artichoke hearts into bite-size pieces. Add artichoke hearts, rice-a-roni, cooked chicken, sundried tomatoes, chopped green onions, and chopped green bell peppers to the bowl. Toss to combine. Season with salt and black pepper.
Cover the bowl and refrigerate for a few hours before serving.
You can substitute an equivalent amount of white rice, wild rice, or brown rice.
I use rotisserie chicken in this chicken salad. You can use any cooked chicken that you have on hand. Chicken breasts, chicken thighs, chicken tenderloins, or canned chicken all work fine.
Make sure to use marinated artichoke hearts and not canned artichoke hearts. The base of the dressing for this chicken salad is the liquid from the marinated artichoke hearts. It has TONS of great flavor.
Store leftovers in an airtight container in the fridge.
