This dish is super easy to make with only a few simple ingredients. Start by cooking rice-a-roni according to package instructions. Cool to room temperature. Drain marinated artichoke hearts over a large bowl. Add mayonnaise and curry powder and stir to combine. 

Chop artichoke hearts into bite-size pieces. Add artichoke hearts, rice-a-roni, cooked chicken, sundried tomatoes, chopped green onions, and chopped green bell peppers to the bowl. Toss to combine. Season with salt and black pepper. Cover the bowl and refrigerate for a few hours before serving.

  • 1 (12-oz) jar marinated artichoke hearts, drained and liquid reserved
  • 1/4 cup sundried tomatoes, chopped
  • 3 green onions, chopped
  • ½ large green pepper, chopped
  • cup mayonnaise
  • 1 tsp curry powder
  • 4 cups chopped cooked chicken
