Asparagus is one of our favorite summer sides. It is SO easy to make and it always tastes delicious. This Roasted Asparagus with Parmesan Cheese just might be our favorite asparagus recipe. It is super simple to make and it is loaded with great flavor. This is our go-to weeknight side dish. It goes with everything! Bonus – it is low-carb, keto-friendly, AND gluten-free.
How to Make Roasted Asparagus with Parmesan
This side dish is effortless to make with only a few simple ingredients. Snap the woody ends of the asparagus spears off and place them in a single layer in a baking pan or rimmed baking sheet. Spread mayonnaise over the asparagus. Sprinkle with grated parmesan cheese, garlic powder, and paprika. Season with salt and pepper, if desired. Bake in a preheated oven until tender.
Helpful Tips & Frequently Asked Questions
- Make sure to trim the woody ends of the asparagus spears. The thick bottom part of the spear is white or light purple in color. It is tough and not meant to be eaten. Use a knife to quickly cut the tough ends off before adding the spears to the baking dish.
- When possible, choose a bunch of asparagus where the stalks are about the same diameter.
- Depending on the size of the asparagus, you will need one or two bundles.
- I recommend using a full-fat mayonnaise. Lower calories mayonnaise does not work well in this recipe.
- I prefer Duke’s or Hellmann’s Mayonnaise.
- Variations:
- Add a drizzle of olive oil over the asparagus.
- Top the asparagus with some panko breadcrumbs or bread crumbs tossed with melted butter.
- Add some lemon slices on top.
- Can Asparagus Parmesan be made in advance? Yes! You can assemble the dish ahead of time and refrigerate it overnight.
- Store leftovers in an airtight container in the refrigerator.

Ingredients:
- 1½ pounds fresh asparagus trimmed
- ½ cup mayonnaise
- ⅓ cup grated parmesan cheese
- ¼ tsp garlic powder or to taste
- ¼ tsp paprika

I made two pans of this for a church potluck today, and it was a huge hit! Someone even poured the juice out as gravy after the asparagus was gone! I added a half tablespoon of lemon pepper in the topping, because I like lemon with asparagus.
