What is the Green Jacket Salad?

The recipe for this Green Jacket Salad comes from the famed Green Jacket restaurant in Augusta, GA. It was originally located directly across from Augusta National Golf Club. The restaurant is no longer in business, but I found the original salad recipe in one of my Masters cookbooks. It sounded good, so I whipped it up to go with dinner last week.

How to Make Green Jacket Salad

he salad is SUPER simple. Romaine or Iceberg lettuce, tomatoes, pita chips, green onions, parsley, parmesan, and a quick vinaigrette. The original recipe says to toast pita bread pieces. I skipped that step and just bought a bag of pita chips.

The dressing makes this salad. Oil, red wine vinegar, fresh parsley, seasoned salt, oregano, and green onions. Don’t skip the seasoned salt. It really makes the dressing super delicious.

You can chop the vegetables in advance and toss the salad right before serving.

Ingredients:

  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp chopped fresh parsley
  • 1 tsp seasoned salt
  • 1 tsp dried oregano
  • 1 head iceberg lettuce or 2 heads romaine lettuce, chopped
  • 1 cup cherry tomatoes sliced in half
  • 1 bunch green onions chopped
  • 2 Tbsp grated Parmesan cheese
  • 1/2 cup broken pita chips

Instructions:

  • Whisk together oil, vinegar, parsley, seasoned salt, and oregano.
  • Combine lettuce, tomatoes, green onions, Parmesan cheese, and pita chips in a large bowl.
  • Add dressing to the bowl and toss to mix.

Notes:

Can use either iceberg or romaine lettuce.

  1. Oh I miss the Green Jacket so much!! It was such a great place to go for any occasion – Easter, Mother’s/Father’s Day, after church to eat, date night, and even just after a movie for dessert and coffee! I’m not even a coffee drinker and I LOVED their coffee! Never had a bad meal there! I even remember when there were 2 Green Jacket restaurants – the one across from The Augusta National and the other in Daniel Village. So many good memories!! It was an Augusta landmark and tradition!!

    1. You are absolutely correct! The Parmesan is meant as a substitute in the recipes I see on line. I was a dishwasher at the Green Jacket in Daniel Village (which predated the one on Washington road) and one of my tasks early in my shift was to prep the salads.

    1. And, btw, I didn’t feel anything was missing. I made and used all the dressing, used listed amounts for pita, cheese, cherry tomatoes (no onions as Hub won’t eat them), but only enough salad greens for 2 large salads. VERY tasty!

  3. My dad was over te Green Jacket for years and I worked for him also, there is one main ingredient missing that really makes the salad taste the best!
