Melt butter in the microwave. Pour into the bowl and electric stand mixer. Let cool.
Add brown sugar and granulated sugar to the bowl and mix for 4 minutes.
Scrape down the sides of the bowl. Add eggs one at a time, mixing well after each addition.
Mix together baking soda and warm water and stir to dissolve. Add baking soda mixture and vanilla extract to the dough. Mix well.
In a large bowl, whisk together all-purpose flour, cake flour, baking powder, cinnamon, and salt.
Slowly add the flour mixture to the batter.
Add chocolate chips and chopped pecans to the dough and stir with a wooden spoon or rubber spatula.
Using a medium cookie scoop to scoop the dough and place it on a baking sheet lined with parchment paper or a silicone mat. Cover the baking pan with plastic wrap and chill in the refrigerator for 3 hours up to overnight.
Preheat oven to 350ºF.
Remove the dough from the fridge and place cookie dough balls on parchment-lined baking sheets 2 inches apart.
Bake for 10-12 minutes, or until lightly golden on the edges.
Notes:
I make the cookie dough in an electric stand mixer. You can mix the dough with a hand mixer or by hand with a spatula or wooden spoon.
Can Chocolate Chip Cookies be frozen? Yes! You can freeze the cookie dough or the baked cookies.
To freeze the unbaked cookie dough, scoop the dough and place it on a parchment-lined baking sheet. Place the cookie sheet in the freezer. Once the dough is frozen, transfer cookie dough balls to a freezer bag and store the balls in the freezer for 3 to 6 months.
There is no need to thaw the cookies before baking, simply add a few minutes to the cooking time.
To freeze baked cookies, allow the cookies to cool completely and place them in a freezer bag. Place the bag in the freezer. The cookies will keep for about 3 months in the freezer.
Store the cookies in an airtight container at room temperature.
