Rotel Sausage Cream Cheese Hash Brown Patty Breakfast Casserole Recipe – the best way to start the day! Frozen hash brown patties, sausage, cream cheese, Rotel, cheddar cheese, eggs, milk, onion powder, and garlic powder. Can make it in advance and refrigerate or freeze for later. Perfect for brunch gatherings or a cozy weekend morning, this casserole is a crowd-pleaser that will have everyone coming back for seconds.
Preheat oven to 350ºF. Spray a 9x13-inch baking dish with cooking spray.
Place frozen hash brown patties in the bottom of the baking dish, overlapping if necessary.
In a large skillet, cook sausage over medium heat until no longer pink. Drain excess grease.
In a bowl, combine cooked sausage and cream cheese. Stir to combine.
Sprinkle sausage mixture over hash brown patties. Top with shredded cheese and Rotel.
In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper.
Pour egg mixture over the casserole.
Bake for 45 to 50 minutes, until the eggs are set.
Notes:
I use Jimmy Dean pork sausage. Any brand of breakfast sausage will work great.
Can substitute turkey sausage.
There is no need to thaw or pre-cook the frozen hash browns before adding them to the pan.
You can use any cheese that you enjoy. I use sharp cheddar cheese. Colby-Jack, Monterey Jack, pepper jack, and gouda all taste great.
To reduce the fat, calories, and cholesterol in the dish, substitute 2 cups of egg beaters for eggs.
Variations/Additions:
onions
green bell peppers
red bell pepper
mushrooms
spinach
