To roast the garlic, preheat the oven to 400ºF. Using a sharp knife, cut the top of a bulb of garlic. Place the garlic on a piece of aluminum foil. Drizzle with olive oil and sprinkle with kosher salt and black pepper. Wrap the foil around the garlic and bake in a preheated oven for 30 minutes or until golden brown and tender.
Place feta cheese, whipped cream cheese, roasted garlic cloves, Greek seasoning, lemon juice, and olive oil in a food processor. Season with kosher salt and black pepper to taste. Process the cheese mixture until smooth.
Transfer the feta to a serving bowl. Garnish the dip with a drizzle of extra virgin olive oil, fresh parsley, and red pepper flakes.
