Using a sharp knife, cut the chicken into bite-sized pieces. Season chicken with 1 teaspoon of Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
Add diced chicken to the pan and cook until the chicken is browned, about 5 minutes. Remove the chicken from the pan and set aside.
Add garlic to the skillet and cook for 30 seconds. Stir in chicken stock and uncooked rice. Bring to a boil, then reduce the heat to medium-low. Cover with and simmer for 15-20 minutes.
Stir in heavy cream and parmesan cheese. Add the chicken, remaining Italian seasoning, and onion powder and stir. Season with salt and black pepper to taste.
Notes:
You can use any uncooked chicken in this dish.

I use long grain rice. You can substitute basmati rice or jasmine rice.
I have not made this recipe with brown rice, so I can not say what adjustments would need to be made to the recipe.
Brown rice needs more liquids and takes longer to cook.
