Ingredients:
- 1½ -lbs boneless skinless chicken breasts diced
- 2 Tbsp olive oil
- 3 cloves minced garlic
- 1 Tbsp Italian seasoning divided
- ½ tsp onion powder
- salt and pepper to taste
- 2½ cups chicken broth
- 1 cup uncooked long-grain white rice
- ¾ cup heavy cream
- ⅓ cup grated parmesan cheese
Instructions:
- Using a sharp knife, cut the chicken into bite-sized pieces. Season chicken with 1 teaspoon of Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken to the pan and cook until the chicken is browned, about 5 minutes. Remove the chicken from the pan and set aside.

But how long are you simmering it once you add the heavy cream and Parmesan, you must have to cook it down a little at least.
Not really- it is just to make the rice creamy. Maybe a minute or two, but you make it however you like. Enjoy!
I got this in my email this morning and had to try it right away! As luck would have it, I didn’t have enough white rice, so I used brown. I ended up using 3 cups of chicken broth + 1/4 cup white cooking wine and simmering for 45 min. It was ever so slightly too much liquid but was still so good!
