Home Fries Recipe - a diner staple! Red potato cubes are cooked to perfection in a blend of butter and olive oil, and then seasoned with fresh rosemary, thyme, scallions, and garlic. Put the potato cubes in a large saucepot and cover with water. Bring to a boil over medium-high heat and cook for 3 to 4 minutes. Drain the potatoes in a colander and run under cold water to stop the cooking process. Drain well and set aside.
Melt the butter with the olive oil in a large skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, until they are browned and crisp on all sides, about 10 minutes.
Add the green onions, garlic, rosemary, thyme, salt, and pepper and cook, stirring constantly, for 1 to 2 minutes.
