Slow Cooker Cheddar Corn - this stuff is AMAZING!! Just dump everything in the slow cooker and let it work its magic! Frozen corn, cream cheese, cheddar cheese, butter, heavy cream, salt and pepper. Great side dish for a potluck! There is never any left! Such an easy side dish recipe!!
Combine all ingredients in the slow cooker. Cover and cook on LOW for 3-1/2 to 4 hours. Stir before serving. (I also like to stir the mixture half way through cooking)
Notes:
You can use fresh corn cut off the cob or frozen corn kernels.
Can I use canned corn? Yes. I prefer to use frozen, but you can use an equal amount of canned corn. Make sure to drain the corn well before adding to the slow cooker.
You can use freshly cooked bacon or precooked bacon.
You can substitute whole milk for the heavy cream in this dish.
Can I freeze Homemade Creamed Corn? I have not tried freezing this dish. We never have enough leftover. To freeze the corn, cool to room temperature and transfer to a freezer bag. Store in the freezerfor up to 3 months.
Reheat in a medium saucepan on the stovetop over medium heat or in the microwave.
You may need to add some heavy cream to get the original creamy texture.
Store leftovers in an airtight container in the fridge.
