Place chicken in a resealable plastic bag. Whisk together buttermilk, hot sauce, honey, garlic powder, sea salt, and black pepper in a bowl. Pour the buttermilk mixture over the chicken. Seal the bag and let the chicken marinate in the refrigerator for at least 30 minutes.
Preheat oven to 475ºF.
Combine crushed cornflakes, grated parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a shallow bowl or plate. Remove the chicken pieces from the marinade and drain the excess. Dredge the chicken in the panko mixture on both sides.
