1medium onion, chopped
1½lbfresh green beans, cut into 1-inch pieces
½cupItalian seasoned bread crumbs
3(14-oz)cans artichoke hearts, drained and chopped
dash cayenne pepper
salt and pepperto taste
1(2.8-oz)can french fried onions
Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
In a skillet over medium-high heat, heat olive oil. Add onion and cook until tender. Add garlic and cook 1 minute longer. Add fresh green beans and cook an additional 3 minutes.
Remove skillet from heat, add bread crumbs, artichoke hearts, parmesan cheese, cayenne, Italian seasoning, heavy cream, salt, and pepper.
Transfer mixture to prepared pan. Top casserole with french fried onions.
Bake for 25 to 30 minutes.
Make prepare through step 4 and refrigerate or freeze for later.Can also freeze baked casserole and reheat.
