Preheat oven to 375ºF. Lightly spray a loaf pan with cooking spray.
Mix together all ingredients and form a soft dough. Add a little more buttermilk, a tablespoon at a time, if necessary.
Pour dough into loaf pan. Bake for 35-40 minutes, until golden brown.
Notes:
I baked this bread in a loaf pan. You can also shape the dough into a ball, score and X in the top of the loaf with a knife and place in an iron skillet and bake.
Feel free to mix in some currents, raisins, or caraway seeds to the dough.
To make Homemade Buttermilk, for each cup of buttermilk called for in the recipe combine 1 cup of milk and 1 Tablespoon of lemon juice or white vinegar and let sit for at least 5 minutes or until the mixture starts to curdle.
