Notes:
I used Gerber Stage 2 Sweet Potato Baby Food.
You can substitute pumpkin baby food if you prefer.
I used Mott's applesauce in the cake.
Make sure to use real maple syrup for the glaze. Not pancake syrup.
You can substitute milk for the maple syrup if you prefer.
This recipe uses a teaspoon of pumpkin pie spice. If you don’t have any on hand, you can make your own with 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp allspice.
You can bake the cake in any size cake pan that you prefer. You will just need adjust the cooking time.
Can Sweet Potato Bundt Cake be frozen? Yes! Cool the cake completely and wrap the cake in plastic wrap and aluminum foil.
I prefer to freeze the cake without the glaze.
The cake will keep in the freezer for 3 months.
To freeze the glazed cake, place it in the freezer, unwrapped, for 4-5 hours. Once it’s completely frozen, remove it and wrap it before putting it back in the freezer. This will prevent the glaze from sticking to the wrap.
You can freeze any leftover slices of cake. Wrap each piece of cake in plastic wrap, and then cover that with aluminum foil. When you’re ready to eat a slice of cake, simply take it out of the freezer and pop it into the fridge for a few hours.
How long does Bundt cake last? The cake will keep 4 to 5 days in an air-tight container.
