Homemade Grilled Chicken Fajitas - THE BEST homemade fajitas! Chicken and/or beef marinated in Italian dressing, chili powder, cumin, brown sugar, pepper, garlic, salt and chipotle. Can marinate overnight and grill when ready. These fajitas are better than the restaurant! The meat is also great on a salad or in a quesadilla. YUM!
4boneless skinless chicken breasts or 2 lb skirt/flank steak
Whisk together first 8 ingredients. Pour marinade into a large zip-top plastic freezer bag, and add chicken breasts or steak; seal bag. Chill 2 hours. (I prepare this marinade at night and let it sit in the fridge all day)
Grill chicken 15 to 18 minutes or until done. Grill skirt steak 3 minutes per side for medium-rare. Grill flank steak about 8 minutes per side.
Remove from grill, and let stand 10 minutes. Cut diagonally into 1/4-inch-thick strips. Serve with tortillas, sour cream, salsa, lettuce, etc.
