Vanilla Butter Cake - my go-to pound cake recipe! Super easy to make from scratch and it tastes amazing! Butter, sugar, eggs, flour, baking powder, half-and-half, and vanilla. Top the cake with a simple powdered sugar and meringue powder frosting. Not too heavy or overly sweet - perfect! Great for a crowd or a homemade gift. #cake #dessert #poundcake #bundt
Preheat oven to 325ºF. Spray a Bundt pan with cooking spray with flour. Set aside.
Beat butter at medium speed with an electric mixer until creamy. Add sugar and beat until light & fluffy. Add eggs, one at a time, beating just until blended after each addition.
Sift together flour, baking powder, and salt. Add to butter mixture alternately with half-and-half, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla. Pour into a greased and floured 12-cup Bundt pan.
Bake at 325° for 1 hour to 1 hour and 10 minutes or until a long wooden pick inserted in the center of the cake comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan to wire rack; cool 30 minutes or until completely cool.
Frosting
Beat all ingredients with an electric mixer until light and fluffy.
Spoon frosting over cooled cake and serve.
Notes:
To properly measure flour, give the flour a stir to loosen it up in the container. Use a spoon and lightly spoon the flour into your measuring cup. Use a flat straight edge (like the straight back of a knife) to level off the top of the flour in the measuring cup. Do NOT compact the flour in the measuring cup. One cup of flour weighs 4.25-ounces.
I use Bakers Joy or Pam Baking Spray to grease and flour the tube pan. Either works great. You can also use Crisco or butter and dust the pan with flour.
Check the cake around the 1-hour mark. If the cake is starting to get too brown, cover it with foil until it is done.
The frosting uses a teaspoon of meringue powder. You can find meringue powder in the cake decorating section at Walmart, Michaels, or Hobby Lobby.
I like to sprinkle the cake with some white sugar sprinkles. I buy them at Walmart, Michaels, or Hobby Lobby. Look for them in the cake decorating section.
