Black Eyed Pea Salad Recipe - red bell pepper, green pepper, scallions, garlic, olive oil, vinegar, parsley and black eye peas - GREAT side dish! We also like it as a dip. Whisk red and green peppers, scallions, garlic, oil, Champagne vinegar, cider vinegar, parsley, salt, and black pepper in a medium bowl. Toss with black eye peas. Chill.
