Curry Chicken Salad – classic chicken salad with a great curry flavor. This is THE BEST chicken salad EVER!! Tender chicken, creamy mayo, sour cream, crunchy celery, curry, salt, pepper, lemon juice, green onions, and smoked almonds. Copycat recipe from Olexa's in Mountain Brook AL. I think this version is better than the original. Keeps for up to 5 days in the fridge.
In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, curry, salt, and pepper. Stir in the remaining ingredients. Coat evenly.
Cover and refrigerate 25-30 minutes before serving.
Notes:
I use rotisserie chicken in this recipe. You can use any cooked chicken that you have on hand. Chicken breasts, thigh meat, chicken tenders or chicken legs all work great.
This is a great way to use up any leftover grilled chicken!
Can substitute greek yogurt for some of the mayonnaise or sour cream.
Don't like smoked almonds? You can substitute regular almonds, pecans, or sunflower seeds.
Allergic to nuts? Substitute golden raisins.

This chicken salad can be made ahead of time and stored in the refrigerator for up to 5 days.
