Copycat Olexa’s Chicken Salad

One of our favorite lunch spots in Birmingham is a place called Olexa’s. It is an amazing bakery with a super cute cafe inside. All of the food is great! Especially the Chicken Salad. I finally got around to recreating the chicken salad at home. Let me tell you – OMG! This was SO good! It might be better than the original! Traditional chicken salad with smoked pecans and curry powder. Super simple to make and it has SO much flavor! Serve this on a croissant, on a bed of greens, with crackers, or on toasted bread. One bite and this is sure to become a personal favorite.

How to Make Curry Chicken Salad

This easy recipe is effortless to make with only a few simple ingredients. In a large bowl, whisk together mayonnaise, sour cream, lemon juice, curry powder, salt, and black pepper. Add chopped celery, shredded chicken, green onions, and almonds. Stir to combine. Serve the chicken mixture on a croissant or in lettuce wraps.

Ingredients:

  • ½ cup mayo
  • ½ cup sour cream
  • ¼ tsp curry
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp lemon juice
  • ½ cup chopped celery
  • cup cooked chicken chopped
  • ¼ cup chopped green onions
  • ¼ cup coarsely chopped smoked almonds

Instructions:

  • In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, curry, salt, and pepper. Stir in the remaining ingredients. Coat evenly.
  • Cover and refrigerate 25-30 minutes before serving.

    1. I usually use about half of a rotisserie. If you are cooking raw chicken, about a pound of tenders or 2 breasts (depending on the size) should be enough.
