Crack Chicken Melts - perfect for entertaining! English muffins topped with tender chicken, ranch seasoning, bacon, and cheddar cheese. Exceptionally delicious! They’re wonderful when you need a quick and easy party appetizer or a snack. Only 6 ingredients - chicken, cheddar cheese, bacon, ranch seasoning, mayonnaise, and English muffins. Ready to eat in under 20 minutes.
Combine chicken, cheese, bacon, and ranch seasoning in a bowl. Add mayonnaise and gently mix.
Split English muffins.
Spread chicken mixture generously over each piece of bread.
Transfer muffin pieces to a baking sheet. Bake for 15 minutes or until hot and cheese starts to bubble.
Place under broiler for a few minutes until golden brown.
Notes:
I use rotisserie chicken for the cooked chopped chicken in the sandwiches. You can use any cooked chicken that you have on hand. Chicken breasts, chicken thighs, and chicken tenderloins all work fine.
Make sure to use a high-quality mayonnaise in this recipe. I suggest Duke's or Hellmann's.
Can make the melts on sub rolls or hearty sourdough bread slices.
Try these on Kings Hawaiian Sub Rolls - SO good!
Add a few dashes of hot sauce for a kick.
