Mexican Green Bean Recipe – easy baked green bean recipe loaded with tons of Mexican flavors. Low-carb, keto-friendly, and gluten-free. Super simple to make with very little prep time and is ready to eat in under 30 minutes. Fresh green beans, mayonnaise, cheddar cheese, taco spices, and Rotel diced tomatoes and green chiles. This is the perfect side dish for all of your favorite Mexican food!
1(10-oz)can Rotel diced tomatoes and green chilies,drained
Instructions:
Preheat oven to 350ºF.
Place green beans in a lightly greased 9x13x2-inch baking dish. Drizzle with olive oil. Season with salt and black pepper.
In a small bowl mix together mayonnaise and taco seasoning.
Spread mayonnaise over the green beans. Sprinkle cheddar cheese and Rotel diced tomatoes and green chiles over the mayonnaise mixture.
Bake, uncovered, for 20 to 25 minutes.
Notes:
I prefer to use Hellmann’s Mayonnaise.
For best results, grate the cheddar cheese by hand straight from the block. Pre-grated cheese contains preservatives that prevent it from melting properly.

Can Mexican Green Beans be made in advance? Yes! You can assemble the recipe ahead of time and refrigerate it overnight before baking.
