How to Make Cheesy Rotel Green Beans

This easy side dish is effortless to make with only five simple ingredients. Trim green beans and toss in olive oil. Place beans in a single layer in a baking dish or rimmed baking pan that has been sprayed with olive oil or nonstick cooking spray. Season with salt and black pepper. In a small bowl, stir together mayonnaise and taco seasoning. Spread the mayonnaise mixture over the green beans. Sprinkle shredded cheddar cheese and Rotel diced tomatoes and green chiles over the green beans. Bake in a preheated oven until tender. Garnish with parsley or cilantro.

Tips & Frequently Asked Questions

  • We like our green beans with a little crunch. Adjust the cooking time to reach your desired level of crispiness.
    • For super tendergreen beans, blanch the green beans before baking.
      • Bring a large pot of water to a boil over medium-high heat. Add the green beans and boil until tender-crisp, but still bright green, about 3 to 5 minutes. Drain well and immediately plunge into cold water to stop the cooking.

  • Variations/Additions:
    • cotija cheese
    • sauteed bell peppers
    • red onion
  • Are Mexican Green Beans spicy? There will be a little kick from the Rotel. Use mild Rotel if you are worried about the heat.
  • For best results, grate the cheddar cheese by hand straight from the block. Pre-grated cheese contains preservatives that prevent it from melting properly.
