This easy side dish is effortless to make with only five simple ingredients. Trim green beans and toss in olive oil. Place beans in a single layer in a baking dish or rimmed baking pan that has been sprayed with olive oil or nonstick cooking spray. Season with salt and black pepper. In a small bowl, stir together mayonnaise and taco seasoning. Spread the mayonnaise mixture over the green beans. Sprinkle shredded cheddar cheese and Rotel diced tomatoes and green chiles over the green beans. Bake in a preheated oven until tender. Garnish with parsley or cilantro.

Ingredients:
- 1½ pounds fresh green beans trimmed
- 2 tsp olive oil
- ½ cup mayonnaise
- 2 Tbsp taco seasoning or to taste
- ½ cup shredded cheddar cheese
- 1 (10-oz) can Rotel diced tomatoes and green chilies, drained
Instructions:
- Preheat oven to 350ºF.
- Place green beans in a lightly greased 9x13x2-inch baking dish. Drizzle with olive oil. Season with salt and black pepper.
- In a small bowl mix together mayonnaise and taco seasoning.
- Spread mayonnaise over the green beans. Sprinkle cheddar cheese and Rotel diced tomatoes and green chiles over the mayonnaise mixture.
