Blooming Quesadilla Ring - delicious baked quesadilla ring that is perfect for game day, parties, and an easy dinner. This show-stopping appetizer is filled with tender chicken, salsa, taco seasoning, black beans, melty cheese, and flour tortillas. Dip it in salsa, guacamole, or sour cream for an irresistible flavor explosion!
Preheat the oven to 350ºF. Line a large baking sheet with parchment paper and place a wide-mouth mason jar or glass in the center. Set aside.
In a large bowl, stir together cooked chopped chicken, taco seasoning, salsa, and black beans. Cut tortillas in half. Top the tortilla halves with a few tablespoons of shredded cheese and the chicken mixture. Roll the tortillas into cones.
Create a ring around the jar with about 13 tortilla cones. The points of the cones should be in the center, touching the jar. Sprinkle cheese over the layer. Repeat with the remaining cones to make 2 more layers. Remove the jar from the center of the ring.
Bake for about 20 minutes until the cheese has melted and the tortillas are crispy.
Transfer the quesadilla ring to a serving platter and garnish with fresh cilantro.
Notes:
I use rotisserie chicken in this recipe. You can use any cooked chicken in this dish: chicken breasts, chicken thighs, chicken tenderloins, or canned chicken.
