How to Make Blooming Quesadilla Ring
This dish is super easy to make with only a few simple ingredients. Line a large baking sheet with parchment paper and place a wide-mouth mason jar or glass in the center. Set aside.
In a large bowl, stir together cooked chopped chicken, taco seasoning, salsa, and black beans. Cut tortillas in half. Top the tortilla halves with shredded cheese and the chicken mixture. Roll the tortillas into cones.
Create a ring around the jar with about 13 tortilla cones. The points of the cones should be in the center, touching the jar. Sprinkle cheddar and Monterey Jack cheese over the layer. Repeat with the remaining cones to make 2 more layers. Remove the jar from the center of the ring.
Bake in a preheated oven until the cheese has melted and the tortillas are crispy. Transfer the quesadilla ring to a serving platter and garnish with fresh cilantro.

Sounds perfect for my get together BUT I HAVE A VEGETARIAN coming. How can I make a tasty vegetarian version of this for her?
just replace the chicken with your favorite veggies – onions, peppers, corn, olives, tomatoes – anything goes
Just tell them to deal with it and eat the chicken. It won’t kill them. If it’s that big of deal tell them to bring their own food. I’m definitely not going out of my way for one person and making something different because they won’t eat meat. That’s just as silly as the reason most vegetarians won’t eat meat. Not my issue.
