Brown ground beef in a large skillet over medium-high heat. Drain excess grease. Add taco seasoning and water to the pan and simmer for 5 to 10 minutes.
In a large bowl, stir together hash browns, cheese soup, cream of chicken soup, sour cream, shredded cheddar cheese, taco meat, Rotel diced tomatoes and green chiles, black beans, and corn.
Spray a 6-qt slow cooker with nonstick cooking spray. Pour potato mixture into the crockpot.
Cover and cook on LOW for 8 hours.
Notes:
I use frozen diced hashbrown potatoes. Can substitute shredded hash browns.
Can substitute ground turkey for hamburger.
I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
