Notes:
To save on some calories, I use ground turkey in this recipe. If you aren’t a ground turkey fan, feel free to substitute lean ground beef, ground chicken, or ground pork. Either way, this will taste great!!
You can use any cooked rice that you enjoy. Long grain rice, brown rice, jasmine rice, or wild rice are all delicious.
Can substitute cauliflower rice
Can I make Stuffed Bell Pepper Soup in the crockpot? Yes. Cook the ground turkey. Add the remaining ingredients, except the rice. Cover the slow cooker and cook on LOW for 6-8 hours. Stir in cooked rice and cook for an additional 15 minutes.
Can I freeze Stuffed Pepper Soup? Yes. Cool the soup to room temperature. Transfer the soup to freezer bags and store in the freezer for up to 3 months.
Thaw and reheat in the microwave or on the stovetop.
You may need to add more liquid to the soup when reheating, as the rice will absorb some of the liquid.
Store leftovers in an airtight container in the refrigerator.
