Heat oven to 350ºF. Spray a small baking dish with nonstick cooking spray. Set aside.
Pulse artichokes, ¼ cup parmesan cheese and remaining ingredients in a food processor until artichokes are finely chopped.
Scrape mixture into a small dish and spread into an even layer. Top with remaining grated parmesan cheese.
Bake for 25 to 30 minutes, or until the dip starting to bubble around edges. Turn the broiler on and cook until the cheese is lightly brown.
Notes:
Feel free to add chopped spinach to the dip mixture.
I would add half of a package of frozen spinach.
Make sure to thaw and drain all of the excess liquid.
Can use fresh spinach.
