Taco Lasagna Recipe - A Tex-Mex twist on classic comfort food! Layers of tortillas, savory seasoned beef, gooey cheese, black beans, and zesty Rotel combine for a flavorful fiesta in every bite. This easy-to-make recipe is perfect for family dinners or potlucks. Ground beef, taco seasoning, salsa con queso dip, black beans, Rotel, cheddar cheese, and tortillas. This dish is always a crowd pleaser!
Preheat oven to 350ºF. Spray a 9x13-inch baking dish with nonstick cooking spray.
In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain excess grease. Add taco seasoning, water, and Rotel to the pan. Simmer for 5 minutes. Add queso cheese dip and black beans. Stir well. Remove from the heat.
Cut tortillas in half. Place six tortilla halves in the bottom of the baking dish. Top the tortillas with half of the beef mixture. Repeat layers.
Add a layer of tortillas on top of the casserole and sprinkle with shredded cheddar cheese. Cover the casserole dish with aluminum foil.
Bake for 20 to 25 minutes. Remove the foil and cook under the broiler until the cheese is bubbly. Garnish with cilantro.
Notes:
Can substitute ground turkey or ground chicken for lower calories.
