Pizza Bombs Recipe - pizza dough squares, loaded with pizza sauce, pepperoni, and gooey mozzarella cheese cubes. Baked to golden perfection in a muffin pan, they're then brushed with garlic butter and sprinkled with Parmesan cheese. Bursting with flavor in every bite, they're the ultimate snack or appetizer for pizza lovers.
Preheat oven to 400ºF. Spray a muffin pan with nonstick cooking spray.
Cut the mozzarella cheese block into 12 cubes.
Open a can of pizza dough and roll it out into a large rectangle.
Cut the dough into 12 squares.
Top each piece of dough with pizza sauce, pepperoni slices, and a cheese cube.
Fold the dough's edges around the filling and pinch them together to securely seal, creating a compact bundle. Place the dough balls seam-side down in the muffin pan.
Bake for 15 to 18 minutes, until golden brown.
Whisk together melted butter and Italian seasoning.
Brush the hot rolls with garlic butter and sprinkle with parmesan cheese.

I use a can of Pillsbury refrigerated pizza dough.
Can I use refrigerated biscuit dough? Yes. I've seen some recipes that use biscuit dough instead of pizza dough.
I suggest using the smaller can of refrigerated biscuits. It is a 12-oz can with 10 biscuits in it. They are also sold in 6-oz cans with 5 biscuits.
If you use Pillsbury Grands! Split the biscuits in half and make 16 bombs.
You can use the whole biscuits. I tried this and found that there was more biscuit than pizza fillings.
Do I have to bake the pizza bites in a muffin tin? No. You can bake the pizza pockets on a parchment paper-lined baking sheet.
Can I use shredded mozzarella cheese? Yes. I tested the recipe with shredded cheese and preferred the cubes of cheese.
For extra flavor, add a dash of Italian seasoning, oregano, basil, or garlic powder to the filling.
You can use any of your favorite pizza toppings in this recipe:

Can I make Pizza Bombs ahead of time? Yes! Assemble the pizza bites and cover the pan with plastic wrap. Store in the refrigerator for up to 24 hours before baking.
Can I Freeze Pizza Bombs? Yes. To freeze, first, place the bombs onto a baking sheet and transfer to the freezer until solid. After they are frozen, store them in a freezer bag for up to 3 months.
When ready to bake, simply add a few minutes to the baking time or let them thaw in the refrigerator overnight.
You may also freeze the cooked pizza bombs.
Store leftover pizza pockets in an airtight container in the refrigerator.
