Preheat oven to 400ºF. Line a rimmed baking sheet with foil and top with cooking rack.
In a shallow dish, combine brown sugar and chili powder.
Wrap each pork chop with two slices of bacon. Coat bacon-wrapped pork chops with the brown sugar and chili powder mixture. Place on the prepared baking sheet.
Bake for 15 to 18 minutes. Turn oven to broil and broil the pork chops 2-4 minutes or until they reach 140°F.
Remove from the oven and let pork chops rest 5 minutes before serving (the temperature will continue to rise to 145°F).
Notes:
I suggest using regular sliced bacon and not thick-cut bacon in this recipe. Thick-cut bacon won't crisp up as easily.
This recipe uses 3/4-inch thick boneless chops, if your chops are thicker or thinner, the time will need to be adjusted.

For a low-carb/keto-friendly dish, you can substitute Swerve or Truvia Brown Sugar blend for the brown sugar.

You want the cooked pork chops to have a hint of blush when you cut into them.
