Million Dollar Chicken Noodle Casserole – GREAT weeknight chicken casserole. Super easy to make and tastes like a million bucks!! Can make ahead and freeze for a quick meal later! Egg noodles, cooked chicken, cottage cheese, cream cheese, cream of chicken soup, sour cream, onion, garlic, cheddar cheese, and french fried onions. Everyone cleaned their plate and went back for seconds!
Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
Cook egg noodles according to package directions. Drain and set aside.
In a large bowl, combine cooked chopped chicken, cream of chicken soup, cottage cheese, cream cheese, sour cream, cheddar cheese, onion powder, garlic powder, and cooked noodles. Mix until thoroughly combined.
Spread mixture into prepared pan. Top the casserole with fried onions.
Bake uncovered for 25 to 30 minutes, until bubbly.
Notes:
I used a rotisserie chicken for the cooked chicken in this recipe. You can use any cooked chicken that you have on hand. Chicken breasts, chicken thighs, and chicken tenderloins all work great.
Feel free to add some vegetables to the casserole. Frozen peas, broccoli, spinach, frozen veggies, mushrooms are all great!
Feel free to substitute panko bread crumbs or crushed ritz crackers and melted butter for the french fried onion on top of the casserole.
You can use any cream of soup that you have on hand. Cream of chicken, cream of mushroom soup and cream of celery soup all work fine.
I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
Can Million Dollar Chicken Noodle Bake be made in advance? Yes! You can assemble the casserole ahead of time and store it in the refrigerator until you are ready to bake.
Can Million Dollar Chicken Noodle Bake be frozen? Yes! Assemble the casserole and cool completely. Cover the baking dish with plastic wrap and aluminum foil and freeze.
