Grilled Chicken Piccata Pasta


We are always looking for new ways to enjoy some of our favorite dishes.  This dish combines two of our favorite dishes - grilled chicken and chicken piccata.

I used a bottled lemon pepper marinade for the chicken and added some minced garlic.  I whipped up the sauce while Chicken Legs grilled the chicken.   It all came together in no time.  We both absolutely loved this dish.  The chicken was juicy and extremely flavorful.  The sauce tasted amazing!  It was definitely a fun change to our usual chicken piccata.




Grilled Chicken Piccata Pasta

Chicken Marinade
1 cup lemon pepper marinade (I used Ken's)
1 Tbsp minced garlic
2 large boneless, skinless chicken breast

Sauce
2 cups chicken broth
2 tsp garlic
2 tbsp butter
1 tbsp flour
1/4 cup capers
1 tbsp parsley

6 oz cooked fettuccine pasta
parmesan cheese for topping

Combine the lemon pepper marinade and garlic.  Pour over chicken and marinate for at least one hour or overnight.  Grill chicken until done.

While the chicken grills, prepare the sauce.  In a medium sauce pan, melt butter and add flour.  Stir to combine.  Whisk in chicken broth and garlic.  Stir in capers and parsley.  Simmer sauce for 5-10 minutes, until it reduces by a third.

Slice chicken into bite sized chunks and add chicken to the sauce. Cook for 2 minutes, then pour sauce mixture over fettuccine. Top with cheese and toss to combine.

  2. I would think you were crazy for trying to GRILL chicken piccata since it uses a pan sauce but then again I did chicken marsala that way.

    I'll have to be giving this a shot, Steph.

  4. I used Egg Noodles because that's what I had on hand. Not sure if that made a difference but I felt like more sauce was needed. Maybe my noodles "sucked up" the sauce more. But overall it was very good and easy to make.
