I’ve shared a few cake mix cookie recipes over the past few weeks. We made Snickerdoodles and White Chocolate Chip Nutella Cake Mix Cookies. Today I am sharing a Peanut Butter Chocolate Chip Cake Mix cookies. Like the other cake mix cookies, these peanut butter chocolate chip cookies are super duper easy to make. These might be my favorite, or I could just be saying that because they are the last cookies I had. Either way, they were delicious. They are moist, light and fluffy. I can’t say how well they keep because they didn’t last long. I took them to work and they were gone in a flash!
Peanut Butter Chocolate Chip Cake Mix Cookies

1 box yellow cake mix
1 cup peanut butter
¼ cup butter, softened
⅓ cup water
1 tsp vanilla
2 eggs
2 cups chocolate chips
Preheat oven to 350.
In a large bowl, mix together the cake mix, peanut butter, egg, butter, water, vanilla and with a hand-held electric mixer. Fold in the chocolate chips.
Using a medium cookie scoop, drop cookies onto parchment lined cookie sheets.
Bake for 8-10 minutes. Cool on a wire rack.

Made these for a football party at my house this weekend. Really good recipe. I think a lot of PB cookies get hard too quickly and these stay nice and soft. I left out the choc chips and rolled them in regular sugar like a traditional PB cookie and they turned out great.
I would just loooooove to know if your coworkers realize how lucky they are to have you.

Ya know what? These look pretty darn good. I have been thinking about peanut butter cookies a lot lately, but I had never though to make a cake mix version of them. What a great idea!
