Pin This RecipeThis Green Chile Chicken Rice-A-Roni Casserole was a HUGE hit in our house. We could not stop eating it! It was even great reheated for lunch the next day. Chicken Legs loved this so much that he had me make this two weeks in a row. It is that delicious! Chicken, rice, cheese, green chiles, cream of chicken soup, and sour cream. So comforting!
This is super easy to make. Start with making the chicken rice-a-roni. While the rice is cooking, chop up some chicken and combine it with sour cream, cream of chicken soup, diced green chiles, cumin, and pepper jack cheese. Add in the cooked rice and spread in a baking dish. Top with more cheese and bake.
This casserole can be made ahead of time and even frozen for later. Such a convenient weeknight meal! I actually have one in the freezer right now!
Just a note on this recipe- I used a box of Chicken Rice-A-Roni for this casserole, but you could definitely use my homemade version of Chicken Rice-A-Roni in this dish. Either is great.

Green Chile Chicken Rice-A-Roni Casserole
Ingredients:
- 1 box Chicken Rice-a-Roni, plus water called for on package
- ½ cup sour cream
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- 1 (4.5-oz) can diced green chiles
- 1 tsp cumin
- 2 cups pepper jack cheese shredded
- 3 cups chopped cooked chicken
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- Prepare Chicken Rice-a-Roni according to package directions.
- In a large bowl, combine sour cream, Cream of Chicken soup, green chiles, cumin, 1 cup of pepper jack cheese and cooked chicken. Stir in prepared rice. Spoon into prepared baking pan.
- Sprinkle remaining 1 cup of pepper jack cheese on top of casserole. Bake for 25 to 30 minutes, until cheese is melted and bubbly.
Notes:
- I used rotisserie chicken for the cooked chicken in this casserole.
- I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.

Try Mexican Crema it’s not as acidic or ad thick as sour cream
Make this at least once a month. I use my fresh roasted Hatch Chilies instead of canned. Gives it heat, but we like love the flavor.
