Oatmeal Peanut Butter Cookies – seriously delicious! Crispy on the outside, chewy on the inside! SO easy to make! Shortening, butter, brown sugar, sugar, peanut butter, eggs, flour, baking soda, salt and oatmeal. I always double the recipe! These cookies never last long!
This is a classic peanut butter cookie with just a hint of oatmeal. It reminded me of the Girl Scout peanut butter sandwich cookie without the filling. These were really easy to make. They were crispy on the outside and chewy on the inside. It is everything a peanut butter cookie should be – simple & good!
Oatmeal Peanut Butter Cookies
ingredients:

½ cup shortening

½ cup margarine, softened

1 cup packed brown sugar

¾ cup white sugar

1 cup peanut butter
-
2 eggs
-
1-½ cups all-purpose flour

2 tsp baking soda

1 tsp salt
- 1 cup quick-cooking oats
instructions:

Preheat oven to 350ºF.

In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended.
- Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by tablespoons onto ungreased cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don’t over-bake. Cool and store in an airtight container.
Would using butter instead of margarine make much of a difference? I don’t buy margarine.
