Southern Style Mac & Cheese
I have been on a Mac & Cheese kick lately.  I found this recipe in The Deen Family Cookbook and knew it should be good.  I was right; it was great.  It was really a traditional southern mac & cheese – creamy and cheesy!  It is really quick and easy to make since it doesn’t require a roux – a plus in my book.  The prep time is basically the time it takes to boil the pasta.  I cut the cheese down a little since the original recipe had a full pound of cheese!  (That goes back to wanting to fit into my pants again)  We served it with our favorite chicken fingers.

Southern Style Mac & Cheese

4 Tbsp butter, cut into pieces
8 oz uncooked elbow macaroni
3 eggs, lightly beaten
1 cup milk
½ cup sour cream
½ tsp salt
½ tsp pepper
½ tsp dry mustard
2 ½ cups grated cheddar cheese

Preheat oven to 350. In a large pot of boiling salted water, cook the macaroni according to the package directions.

In a medium bowl, mix together the butter, eggs, milk, sour cream, salt, pepper and dry mustard. Drain the macaroni, transfer it to a large bowl, and stir in 2 cups of cheese. Add the egg and milk mixture and stir to combine. Pour into a 9-inch baking dish and bake for 30 minutes. Top with remaining cheese and broil until golden.
