Creamy Chicken & Noodles


I've been following Jill's Southern Living Challenge blog.   She challenged herself to try 100 Southern Living recipes in 2010.  She made tons of recipes that I've had bookmarked for years.  This recipe has been on my "to make" list for a really long time.    I finally decided that I must make this recipe after Jill raved about it.  I can't believe that it took me so long to make this!  It was fantastic.  It even tasted great reheated the next day.  This is a recipe that I will be making over and over.  It doesn't photograph well, but, believe me, it is worth making!




Creamy Chicken & Noodles
adapted from Southern Living
(Printable Recipe)

1 (0.6-oz.) envelope Italian dressing mix
1 (8-oz.) package wide egg noodles
2 tablespoons butter, softened
3 cups chopped cooked chicken
1 cup whipping cream or evaporated milk
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Cook noodles according to package directions; drain well, and return noodles to pan.

Stir in 2 Tbsp. butter, and toss to coat. Stir in chopped chicken, next 3 ingredients, and dressing mix. Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated. Serve immediately.

  9. I can imagine that the evaporated milk must make it so creamy. Looks great. Southern Living is one we get monthly and I'll never catch up with my to try folder.
